Garza Blanca Cancun has an infinity pool on its oceanfront rooftop, on Carretera a Punta Sam, north of the Hotel Zone. Only adults can use it, and the rooftop bar sits beside the water. The views run across the Caribbean, and the catch is access: the hotel doesn't publish a day pass.

If you want a quiet, grown-up rooftop and you're happy to book a room, this is a strong choice. The hotel's own site describes an adults-only oceanfront rooftop with an infinity pool, a bar and panoramic ocean views. Hyatt Zilara Cancun also has an adults-only infinity pool on its roof, and Mondrian Cancun's adults-only pool is on its rooftop too. Garza Blanca's bar sits right at the pool.
The downside is access. The hotel doesn't publish a day pass, season, heating or pool hours, so you can't plan a drop-in swim. Royalton Chic sells passes from USD $120 and Four Points by Sheraton Cancun Centro sells them too.
